介绍

埃科菲厨皇国际名厨协会(即DisciplesEscoffier International,简称DEI) 是一个非盈利性协会,成立于1954年,是世界上最重要的国际美食协会之一。协会以法国荣誉骑士团勋章获得者奥古斯特·埃科菲(Auguste Escoffier)先生的名字命名。协会现在在意大利、德国、瑞士、荷比卢(荷兰、比利时和卢森堡)、墨西哥、日本、美国和加拿大等国家和地区开设有代表处,在法国拥有2000多名会员,更有20000多名会员遍布全球各地。

Introduction

Disciples Escoffier International was founded in 1954; it is an non-profit association and one of the world's most important international cuisine associations. Funded in association with Auguste Escoffier France - the knights of honor medal recipient. The association now exists in Italy, Germany, Switzerland, the Netherlands, Belgium, Luxembourg,Mexico, Japan, the United States, Canada and other countries, as well as areas with representative offices, there are more than 2,000 members in France, and more than 20,000 members around the world.

半个世纪以来,埃科菲万国成员在法国以及国外有一个目标就是举办纪念法国国际美食大师奥古斯特·埃科菲厨皇国际名厨协会。其目的是推广由奥古斯特埃科菲厨师创造的伟大的烹饪传统及厨艺,尤其是在初级,中级,高级或专业的厨艺培训领域,以及学徒中推广,80%的星级厨师都秉持着传统烹饪方式。

The Common Objectives of the Delegations

Honour the memory of Auguste Escoffier

For half a century, the Disciples Escoffier International has for objective in France as well as abroad to honour the memory of Auguste Escoffier, Master of French and international cuisine. The aim is to promote the great traditions of cooking and the techniques createdby Auguste Escoffier particularly in the primary, secondary, superior or professional training of cooks, and in apprenticeship, the traditional way of 80% of the starred chefs.

Organising Gastronomic Demonstrations

A key point of the activities of the association is to organize gastronomic demonstrations worth these traditions andto honour, to push forward all the people and personalities who serve the great French cuisine.

该协会在年轻的一代人中引领一场真正的起义,从而使他们发觉想称为厨师的渴望和动机。要做到这一点,奥古斯特·埃科菲厨皇国际名厨协会与学校建立越来越密切的关系,试图在专业人士和学生之间搭建桥梁协会的存在也为家长在就业指导时期对厨师工作的高贵性或是公司所提供的晋升机会做说明时起到重要推动作用。

Motivating Young Generations

The association leads a true battle from the young ones so that they find the desire and the motivation of being cooks. To do so, the International Association of the Disciples Auguste Escoffier is getting closer and closer to schools, establish contacts between professionals and students. Its presence is also important for parents at the time of careers guidance to explain the nobility of the job of cook and the promotional opportunities which it offers in companies.

It is a question of fostering the young ones, whether they are apprentices, employed or helper by inculcating actions and ways of thinking of our great master, man of heart profoundly altruist, without forgetting to add the subtle and indispensable note: "of the man who respectsman".

埃科菲厨皇国际名厨协会中国区起源

谨代表埃科菲厨皇国际名厨协会中国区感谢埃科菲厨皇国际名厨协会亚洲区会长Robert Fontana先生,亚洲区财务长Thierry Muller先生,澳门会长Emmunuel Souliere先生遵循奥古斯特·埃科菲的初衷继续传播并发展烹饪艺术,由此于2006年在上海成立埃科菲厨皇国际名厨协会中国分会。

Robert Fontana先生当时负责为法国华人博古斯世界烹饪大赛征聘青年人才。当他回到中国,他选择与一个伟大的厨师以及永远的朋友一起去冒险:这位朋友便是Emmunuel Souliere。很快,他们在酒店业的角色中有了巨大的成就。法国领事馆,麦德龙,法国食品协会和西亚勒都认可他且成为合作伙伴,并支持埃科菲厨皇国际名厨协会,信任他们的美食项目“世界烹饪传播和不断变化”。被招募的许多重要成员致力于发展该协会,并使其重生,爱美食的人们,毫不犹豫地投身于该协会甚至可以将自己的生存所必需的一部分资金,投入到该协会的重生工作中去。这就是一个协会的诞生,并时刻准备通过对青年人的学徒活动来传递和纪念奥古斯特·埃斯科菲且传播重要的烹饪艺术。

Origins of Disciples of Escoffier International China Delegation

Thanks to Mr. Robert Fontana, Mr. Thierry Muller and Mr. Emmunuel Souliere who founded Disciples of Escoffier International China Delegation in Shanghai in 2006.

Mr. Robert Fontana was at that time in charge of recruiting young Chinese talents for the Bocuse d’Or in France. When he comes back to China, he chosed to go insearch of adventure with a great chef and long-standing friend: Emmanuel Souliere. Very rapidly, they have a great success among the great actors of the hotel industry. The French Consulate, METRO, SOPEXA and SIAL accept to become partners of and to support the Disciples Escoffier China believing in their gastronomic project of "transmitting and changing cooking in the world". Many important members are recruited to develop the association and to make it live; people who for the love of gastronomy, did not be hesitated to invest themselves completely in the association going even up to providing themselves part of thefunds necessary for the survival of the association. This is how a Delegation, ready to transmit the memory of August Escoffier through apprenticeships for young ones and important gastronomic demonstrations, was born.

Shanghai, remains of course, the heart of the Disciples Escoffier Asia which coordinated the delegations, the website and continues to manage at least two hundred members as well as all the gastronomic actions led on the territory in the name of the Disciples Escoffier.

亚洲青年人才赛

2007年以来,埃科菲每年举办一场年轻厨师的烹饪比赛。经过各国预赛角逐之后产生6位优胜的厨师(来自泰国,越南,菲律宾,韩国,澳门,香港,新加坡和中国),他们的年龄都不到25岁却已经在亚洲厨师中是最好的“亚洲青年人才”。他们面对的是,公众和陪审团在两个小时的激烈的角逐中对选手的能力进行评估,且继承了奥古斯特·埃科菲精神。

“Young Talent Escoffier” Competition

Since 2007, the Disciples Escoffier International organized a cooking competition for the young chefs. So, the 6 first young Asian chefs of less than 25 years old (From Thailand, Vietnam, Philippines, Korea, Macao, Hong Kong, Singapore and China) having succeeded in the pre-selection in their native country have rivalled to be the best "Young Talent Escoffier". Facing them, the public and the jury have evaluated their skills in cooking during two hours of fierce competition in respect of the heritage of Auguste Escoffier.
